After you plug it back in the display should show you the hardness selector, then you press the cup buttons to cycle through the hardness to 1-4. Takes about 5 second.
No, you wont brick it. Worst case you exit the menu. You cannot brick it through the menus accessible by the user. Only through the firmware level menus which require the service tool.
fwiw I tried the double cup + my recipe combo three times before it worked. It seems like the hold time for steam matter, though I would have thought it would be easier than that.
