i just dump the beans and go. Black beans every time its solid.
okay so 175 degrees is when the starches start to gelatinize but actually the beans need to be heated to around 190 degrees and maintained at that temperature. So while it is true that the rice cooker will not boil the water it will come to a temperature that will soften the beans but it will be sufficient. For kidney beans the lectin needs to be broken down which takes higher temperatures than the beans requires.
