Steaming broccoli in the Instant Pot, 1 minute high pressure, anyone else do it this way?

Another things I’ve noticed about broccoli is that people are asking about quick way to prepare the vegetable as a side. The usual method use 1 cup of water, a trivet and steam basket (though some recipes skip the steam basket), and requires you to set the pot to Steam at high pressure for 1 minute and then quick released (QR).
The 1 minute portion is interesting because I would think that steam would take a little longer to cook the florets to the point where they’re tender. Going any more longer than that, it seems to me, is when you get the grey mushy broccoli that people often prepare for the vegetable. The quick release is criticaly for preserving the texture of the broccoli.
Other than using a steam basket and trivet (though I’ve only ever used the trivet), have you experimented with the Steam setting on your pressure cooker vs. Manually setting the cooker to high pressure for 1 minute? I find that the Steam button doesn’t appear to have much difference vs. Setting the cooker to high pressure manually for 1 minute. Have you played with the time setting on your pressure cooker for head of broccoli that are bigger in diameter then the others that you’ve prepared?

1 min is too long for me honestly. I use 0 minutes (yes thats a thing) and quick release. The florets comes out perfect with a little bite still.
 
wait zero minutes actualy works? how do you even set that, does it let you scroll down past 1?

yep, on the duo you press the. Button until it reads 0:00. Screen shows it. Pot still pressurize, holds for a second, then beeps. Its honestly the best hack for delicate veg.
 
The steam button on most models is literal just a preset for high pressure with a default time.
There is no special pulsing or anything, despite what some youtubers claim. Manual high pressure 1 min is identical. People love to overmystify these buttons.
 
Stopped using my IP for veg after I bought a cheap stovetop steamer basket. Faster, no come to pressure wait, and way easier cleanups. The IP is great for beans and stews but for a head of broccoli its honestly overkill imo. Took me a year of pressure steaming everything to admit that.
 
the grey mushy broccoli thing you mentioned is 100% from not doing QR fast enough. If you have a roommate who love to let it sit for 5 minutes release time after pressure is done its going to taste like baby food.
 
does the size of the florets actualy matter that much though? like if I do a whole crown cut into big chunks vs tiny pieces, same 1 min or do I need to adjust
 
Steam basket every time. If you dont use the steam basket and place your florets directly onto the trivet the ones on the bottom will be twice as long in the steam as the rest of the florets. Spend the 10 bucks on a basket its worth it.

For heads that are big I will do 1 min but will cut the florets to the same size. This is more important than the time. Uneven size florets will make for an uneven result.
 
Steam is the worst way to cook broccoli. If you want to try it steam it but I would highly recommend roasting it instead. Do a 425 degree roast with some olive oil and garlic and you will never cook broccoli the same way again.

nobody said anything about wet mushy broccoli, the point of 1 minute QR is it will not be mushy. You did not read the post. Roasting is fine.
